Ultimate LCHF Sugar-Free Mayonnaise
Yields12 Servings
Total Time5 mins
 2 Large Egg Yolks
 0.50 tsp Coarse Himalayan Pink Salt (or Sea Salt)
 1 tsp Mustard Powder (add more to taste)
 2 tbsp FRESHLY Squeezed Lemon Juice (Do not use bottled juice because the mayonnaise won't thicken)
 1 tbsp Still Water
 200 ml MojoMe Coconut MCT Oil (You can add up to 300ml)

Drop the Egg Yolks into a narrow cylindrical beaker and sprinkle them with Salt

Add the Mustard Powder

Spoon in the Lemon Juice

Pour in the Water

Gently pour in the MCT Oil

Use a Stick Blender to pulse the Eggs at the bottom a couple of times to combine

Blitz for 2 Minutes until the Eggs and Oil are fully combined and the Mayonnaise becomes thick and creamy

Scrape Mayonnaise into an air-tight jar and store in the refrigerator.
